Chocolate Chip Shortbread

Ingredients

110g AnchorĀ® Unsalted Butter, softened
3 tbsp caster sugar, plus an extra tbsp for sprinkling
150g plain flour, plus extra for dusting
20g rice flour
50g dark or milk chocolate chips

Directions

1. Using electric beaters, cream the butter for 2-3 minutes until light and fluffy. Beat in the sugar. Sift in the flours, a pinch of salt and beat to a smooth paste, then stir through the chocolate chips. Wrap in clingflim and chill for 30 minutes.

2. Preheat the oven to 170C, gas mark 3. Roll out the dough to a rectangle about 6-7cm wide and 0.3cm thick; transfer to a baking tray. Bake for 30-35 minutes until very light golden at the edges. While still warm, cut into 8-10 rectangles, then cool on a wire rack before serving.
